Itoshima is well-known for a wide variety of cuisine, but until now, ramen hasn’t been one of them. That might change with the recent opening of Shimasoba. Produced by Itoshima legend *Sunset Cafe, Current, Hideaway, etc.). The three varieties: soy, salt, and (soon to be available) “white” broth ramen, are made with almost entirely local ingredients; local chicken, pork, and seafood with noodles made from Itoshima wheat.
Ryuta Yoshida, the chef, and manager of the restaurant, who hails from Karatsu, makes the noodles by hand every day. He uses straight, thin, whole wheat noodles for the salt ramen and medium-sized, coarse noodles for the soy sauce ramen.
A mochi dumpling is included as a unique accent. For a side dish, try either the soy sauce flavored chashu pork meat on rice or the salt flavored meat and rice with scallions!
