In Fukuoka, yellowtail is always served at New Year’s celebrations. The name for the fish changes as its size increases from yazu, hamachi to buri. Yellowtail is in season from November to February, and is especially appreciated from December to January, when it is particularly fatty and the fish is associated with good fortune and success in life.
The “live yellowtail sale” is an event in which fresh, firm yellowtail are boldly processed and sold. The sales at this event are so popular that people start lining up for the yellowtail at around 5:00, when it is still dark. On the morning of the same day, yellowtail fillets are also sold at “Shima no Shiki,” a direct sales shop operated by JF Itoshima.
