Fermentation producers from across Kyushu gather in Itoshima for this locally rooted festival. Twenty-nine vendors will offer a wide range of fermented products, including miso, soy sauce, bread, and plant-based fermented butter—each shaped by the climate and culture of its place of origin.

On Dec 20, a large-scale workshop invites 100 participants to make miso, kimchi, and Jomon-style pickles alongside expert fermenters. Participants can take home their handmade ferments to age and enjoy later. The event is an opportunity to explore how fermentation connects food, the body, environment, and traditional knowledge through the unique culture of Itoshima and Kyushu. Meeting local producers and fellow enthusiasts is also part of the appeal.
